Edamame, pronounced "eh-dah-MAH-may," is the Japanese word for "branched bean," known in China as "mao dou" or "hairy bean." Soybeans originated in China around 2000 years ago and have been a favorite vegetable in Asia for centuries. In the 13th century, Japan first developed sweet, green vegetable-type soybeans known as "edamame," cooking and serving them in the pod. Edamame are harvested as green pods connected to stems when the beans are 80 percent mature.
